The O.G.

The best chocolate chip cookies start with great chocolate. Our premium dark chocolate is balanced in profile, with floral notes and a complex blend of intense aromatics. We pair it with the nutty richness of grass-fed browned butter, the full-body creaminess of bourbon vanilla and the caramel undertones of coconut sugar. The OG is an ode to Dave's late grandfather, Armin, who owned the iconic Stern's Bakery in Brooklyn. Though Dave never had a chance to meet Armin, he has visited his bakery often in his dreams.


Chef Dave's Notes:

  • Grass-fed butter, pasture-raised eggs, organic stone-milled flour etc. all have substantially more flavor, in addition to being significantly healthier.
  • Not all sugar is the same! Coconut sugar adds depth. Cane sugar wicks out moisture for better texture and turbinado sugar adds crunch since it is not fat-soluble.
  • Valrhona is consistent in flavor and quality. Small-batch chocolatiers, unfortunately, are often inconsistent from bar to bar.
